Black Edelweiss

Imperial Stout

As the snow falls and the mountains begin to turn white, it’s time for our seasonal Imperial Stout. This rare, limited edition is as dark as the night, thick, and has a rich brown foam. It has aromas and flavours of roasted malt, chocolate, coffee, dried fruit, and a hint of liquorice that are balanced by a light bitterness and residual sweetness. At 12% ABV, the Black Edelweiss is perfect for sharing with friends and family during the Advent season. Dr. Brauwolf wishes you a festive and joyful end to the year!

Gothenburg Porter

Collab Poppel’s

Please welcome our friends Poppel’s from Gothenburg, with their first collab in Switzerland! This is also a premiere for Dr. Brauwolf, as we release our first Porter. This style holds historical significance for Gothenburg, as a key hub for brewing and exporting the style in the 18th and 19th centuries. Expect a deep and rich mahogany appearance, a creamy tan head, aromas and flavours of chocolate, caramel, subtle coffee, a roasted touch and balanced bitterness. Skål!

Sketch Circle Artists Edition Vol. III

Session IPA

Another year passes and we have our latest release of the third Sketch Circle Artists edition! The „Sketch Circle“ happens every month at our taproom. This is where local artists of all styles come together to draw sketches, exchange ideas, and have a good (beer) time. The label’s gold colouring expresses the use of apricots and the hops mix of Idaho 7 and Amarillo, which creates a stone fruit flavour in this year’s 4.5% Session IPA. Come and support your local brewers and artists, one beer at the time!

Mandarine Sour

Sour beer

This fresh, crisp, light sour beer with a distinct aroma of mandarines originates from a new approach at Dr. Brauwolf. The thick mash of the Mango DIPA left us with a loads of fermentable sugars in the grains, which we extracted for a light beer. The resulting wort was then converted with Philly Sour yeast and refined with mandarines from Sicily. Thanks to a large amount of oats and wheat, the Mandarine Sour has body while still being an easy-to-drink beer at 4% ABV. This is the result of innovation, science, and environmental consciousness.

Mango DIPA

DOUBLE INDIA PALE ALE

School’s back after the Summer break and so is our Mango DIPA! This year’s edition is sweeter, juicier, and still hoppy as expected for a double IPA with 13 g/l of aroma hops. The Mango DIPA has been brewed with bohemian pilsner malt, naked oats and wheat malt, fermented with verdant yeast, and dry-hopped with mosaic, citra, and amarillo. Don’t let the light orange and hazy appearance fool you, as this Mango DIPA is no easy walk in the park. This juice bomb comes in at 8.4% ABV!

Aussie Hop Bomb

INDIA PALE ALE

This is our third approach on our beloved Aussie IPA. After a quick visit to Australia, we introduced some new techniques that we acquired overseas. Yet, we have a bold IPA. Fermented with Verdant yeast and layered with fresh Aussie hops (Enigma, Eclipse, Galaxy), which dominates with abundant tropical, floral and resinous flavour and aroma. They’re supported with barley, oats and wheat to round out the rig on this intense tinnie. Be Gentle.

NZ Crisp Lager

Lager

Kia Ora, this is a modern lager. We were so happy with our New Zealand Lager, we didn’t want to change anything. Simple clean malt flavour, lavished with subtle pine and citrus flavours from New Zealand ‘Southern Cross’ hops. The ideal beverage for taking off your jandles and refreshing your neck. Be Gentle.

Very Berry Cherry

Fruited Sour Ale

“Hej Norge, trevligt att brygga med dig!” – We teamed up with our friends from Norway, the infamous Amundsen Bryggeri, which resulted in a split batch double release. The same wort was split in half to make a Hazy IPA with Verdant yeast and Lotus dry-hop on the one side, and a fruited sour ale with Philly Sour and loads of cherry and blackcurrant on the other. The residual sweetness and the colour of this balanced sour ale reminds us of a hip smoothie at 5.6% ABV. Smooth, sour, fruity!

Nordic Alpen Haze

Hazy IPA

“Hej Norge, trevligt att brygga med dig!” – We teamed up with our friends from Norway, the infamous Amundsen Bryggeri, which resulted in a split batch double release. The same wort was split in half to make a Hazy IPA with Verdant yeast and Lotus dry-hop on the one side, and a fruited sour ale with Philly Sour and loads of cherry and blackcurrant on the other. This Hazy IPA tastes like ripe mango, orange, grapefruit, and vanilla, to make a good orange creamsicle-cocktail at 5.8% ABV. Thick, smooth & hazy.

India Pi Ale

3.14…it’s Pi-day! March 14 marks Pi-day in our calendars and to celebrate this day we came up with another version of our I Pi A: A ‘Hopfenweisse’ or in other words a hoppy German wheat beer with 6% ABV. Wheat, flaked oats and naked malted oats were fermented with a German wheat yeast and hopped up with the noble American new world hops Sabro, Simcoe and Mosaic. The result is an easy-drinking and creamy IPA. Stay thirsty!

Röstigraben 2024

EDITION CAFÉ OLÉ

In 2019, Dr. Brauwolf from Zurich and Gab’s from Puidoux near Lausanne teamed up and initiated a beer series called ‘Röstigraben Brassin’. In doing so, this collaboration would build a bridge over a lingual, cultural, and political divide that can only be found in Switzerland, the so called ‘Röstigraben’. In this years 6th edition, Kaffemanufaktur Zürich out of the neighbourhood of Dr. Brauwolf helped to overcome this imaginary border. The result is a Swiss coffee IPA with locally roasted coffee beans and cascara. Café olé, cheers & santé!
